What are the key dates for the series so I don't fall in love with something on an auction site just to have the price sky rocket on me.

......or better yet what is a good online reference to use?

If you avoid the Carson City mint mark, they all tend to be in the same range - S mint coins will be most plentiful generally.

Key dates are 1879-1885 but aside from the unobtanium the Philly issues are low mintage along with the Carson City issues which always carry a mystique premium.

Look at numismedia.com.
Then when you find the common dates check auction results on Heritage, Stacks and ebay.
