I'm looking at the minting years an it all stops at 1964 with Pre-decimal coin, and then resumes from 1966 onwards for decimal coins.

There are no Australian coins dated 1965.
Technically some 1966 decimals were actually minted in 1965 though.

That is correct. No 1965 dated coins, either pre decimal, or decimal.
There were no two bobs (Florins) minted in 1955, either.

Pennies may have been minted into 1965 too?

Yes, Melbourne mint struck pennies in mid 1965 due to the shortage of pennies caused by collectors hoarding many millions of coins in the belief that they would be worth something. There were even news releases saying that people shouldn't retain any except the rare dates. Naturally to avoid 1965 pennies also being promptly hoarded they were dated 1964.
I think some decimals were struck as early as 1964 and there are images of actual coins (1 cent to 50 cents) in the Tuesday 25/8/64 issue of the Canberra Times. The article mentions that Melbourne mint had already commenced striking the 1 cent coin several weeks before (so I'm assuming the photos of actual coins in all denominations were of test strikes rather than production strikings.
They only show one reverse and it has the date on it (1966).
I should add that Harold Holt (then treasurer) put out a press release on 2/7/64 about the shortage of pennies and how the mints are working flat out striking pre decimals when they should be moving to strike decimals for most of the second half of 1964.
I should also add that there is a Pathe newsclip on Youtube from 1964 showing 1 cent coins being struck.

Interesting - what privy marks did the images in the articles show?

The images are not that great (newspaper article found in Trove), plus I'm not that knowledgeable about decimals to identify mints from claws or whatnot
