I have a jar of mexican coins. most are in pesos, but some have dollar signs. are they actually equal to dollars or are they pesos

They are pesos- Mexico used the $ on its coins marked in pesos. Depending on their dates and conditions, they probably are worth about melt for the most part, although there are some varieties. Your best bet to find the value of each is to find a copy of "Coin Values" magazine. Why not start a collection by date of each denomination? Endless hours of fun, sorting, looking up the values and varieties, stapling into 2x2's, filing ...

Also, keep in mind that any Pesos minted before 1993 have been devalued with two zeroes removed from the face value. These coins are no longer exchangeable for Nuevo Pesos(new pesos).

3 zeros Biokemist, the rate was 1000 old pesos to a new (current) peso

**And those old coins and notes are still exchangeable at the Bank of Mexico. Here's the list

Like I said, worth about melt except for certain varieties. Interesting list of coin exchange values, though, wd1040. I can just imagine the size of a truck needed to haul coins worth enough to exchange for a handful of pesos nuevos!

Put a hole in them and they would make nice washers. LOL I still keep them though. You find them often in the coinstar machines.

I gave 5-centavo pieces to students in my Spanish classes in 1992 as souvenirs of my visit to Mexico City (I was actually there on January 1, 1992, when the monetary system switched to the nuevo peso devaluation). I might as well have given them pebbles from the Zócalo, valuewise. Some vendor had a basketful of old coins in the Zócalo; I don't think he wanted more than a few bucks for them, but I decided that they would be too heavy to carry on the plane and passed him up. (I should have passed up the fried rabbit that I ate there, too, lol.)
