I have some old nice roman coins, copper ones, to take out the dirt and whatever, I immersed in first class virgin olive oil inside a 350mL pet mineral plastic water bottle and sealed it. However after 6 months, the coins looked ok but the water bottle had collapsed as if all the air had gone out of it, vacuum inside. when I opened the bottle air surged in and the bottle went back to its right form.

I'm just curious why the bottle would collapse after some time, thanks for input about it

Don't use plastic, use a glass container. Probably oxidation was at work here and used the oxygen and combined with something else.

There could be thermal expansion at work here, if the bottle was originally capped at a higher temp. When the temperature lowered, so did the volume of the oil and air, collapsing the plastic bottle.

You would probably use up a lot of oxygen if you were immersed in olive oil for 6 months too!

seriously:
Thermal and/or chemical reaction
