It's the "tough" coin in a series -- one that is the most expensive to obtain in a series. Things like the 1909-S VDB cent, 1877 cent, 1916-D dime or 1901-S quarter would be "key dates" in their respective series.

Key Coin/Key Date

The major, or most important, coin in a particular series. The "key" coin is usually the lowest-mintage coin and/or the most expensive coin in a particular set. The 1916-D dime, for instance, is usually considered the key coin of the Mercury dime series. It is the lowest mintage coin of the set and the most expensive (in most grades). The 1919-D dime is the "condition rarity key" of the Mercury dime series, as it is the most expensive coin in top condition.

Key date can mean it is a coin that has a low mintage compared to other in the same series.

For instance: Since 1986 the US mint has minted American Silver Eagles/ There is a 1995-W Silver Eagle that was only available in a coin set paired with a Gold Eagle. Now only 30,000 of these coins were minted. Other ASE, mintages go into the millions. So this coin is a key because of a low mintage. BTW this coins sells for $4,000, while other ASE can be had for 30 bucks in proof.

The 1996 Silver Eagle is key because of lower mintage and heavy export. This coin in uncirculated sells for about 60.00, while other uncirculated ASE go for >20.00.

If you search for "key dates" I submitted a list of U.S. keys on a previous thread. It's getting late or I'd search for it now for you. It's here somewhere I promise.
