I am planning to do an IHC set in a blank cent folder. I am wondering if I should include some of the minor varieties like the lg and sm letters on the 1858 flying eagle or the 1860 pointed bust. 1886 v1 and v2 the 1894 double date. I know I will be using the replica/counterfeit coins in it for 1856 flying eagle, 1877 IHC and 1909s IHC. I'll try to take the other coins in genuine unless I forgot some other key dates. Would be practice of my idea be fine? Any ups and downs?

If you buy a "replica/counterfeit" you will always have a "replica/counterfeit". Instead of "wasting" money on those, use the money you DIDN'T spend on them to buy higher grade coins. That may mean you will have some holes in your collection but that's better than having worthless items.
It took about 20 years for me to complete my FE/IHC set.

Well said. Pick an affordable grade for the semi-keys (1869, 1871, 1872, 1908-S and others), buy only attractive examples, and leave the key slots open for down the road. Rather than buy varieties, put your money into better quality regular dates.

Enjoy putting your set together. I would include the SL and LL Flying Eagle cents as well as pointed bust and both 1886 varieties just as you mentioned. I might include the 1865 Plain and Fancy 5, 1864 C/N, 1864 BZ, 1864 L, 1873 Open 3 and 1873 Closed 3. You have a blank canvas, so to speak; utizing a blank book as you are. There are a ton of IHC varieties. 1870, 71 and 72 had both Bold and Shallow N reverse dies. 1867/67 is a neat coin and about the same money as the early 70's coins. 1897 "1 in neck" is a fun MPD to search for. 1858/7 flying eagle is another I would include.

I will be getting some of them through the $70 ebay IHC rolls. Not the so called unsearched ones though.

Have fun collecting this set. I lucked out by inheriting a set with only a few of the keys missing. I saved up until I could buy VF to AU examples of the others. Only took about 10 years. Now I have been working on upgrading all the common dates.

Please don't settle for less than solid VF examples from 1878 - 1909 Philly mints.

Why not take the money you would spend on all those common dates and buy the 77 and 09 S first.(the 56 is another story) once you have them 2 everything else will be easy and since you bought the keys 1st there is a good chance you will save money in the long run. The commons will stay around the same money but the same keys down the road will probably cost more.

Buy the keys first and buy the best you can afford. They are the coins most likely to go up in value first and for the greatest amount. It may limit you to one coin per year (or longer) but will work out to be the best in the long term.

That "buy the keys first" method may work for some, but for me it always felt a little anticlimactic.

I only have 24 coins in my collection and will probably add one, 2 more at the most this year. It's hard saving for the next one with so many lower priced coins out there, but I pick a date and save till I can get one. It seems to work out for me. I buy the keys last, basically due to cost. I have a full date set of Flying Eagle to IHC in G to AU. I have a semi slabbed set in VF to MS but it's not complete. I also have a set of IHC that I consider as 2nds. My eventual goal is to have 2 full sets, one a slabbed set in nothing lower than VF (except maybe the 1877), and another in an album that I may upgrade over time.
