I found this 2007 P nickel last night at work. What do you call this defect in the date and LIBERTY?

Looks like die chips to me.

You can look up die chip at error-ref.com for an understanding of what they are. They are common, random, and do not bring a premium.

With that many die chips, you should examine the coin face closely for die cracks. They will look like thin little jagged lines of metal, raised from the surface. That die took a lot of punishment.

Thanx for the help everyone! After a second inspection I found a few more chips, and some possible cracks. Can anyone confirm?

Yes can confirm: there is a die chip in the letter N and an eyebrow plus a die crack emanating from the corner of Monticello. I'm only seeing damage in that third picture.

It's Jefferson, not Washington, but yes that looks like another die chip.
