This was being touted on ebay as AU. I don't think it quite makes that grade. What are your thoughts?

Nope. Typical ebay overgrading/photoshop.

Exactly...I don't see any diamonds at all. I think this one sold for somewhere in the neighborhood of $160 when it's probably worth 1/3 of that amount.

I call this one VF. Not enough diamond detail and there is a little weakness on the LIberty ribbon. For EF, I think the Liberty ribbon needs to be sharp and you should see some diamonds.

I think it would make EF-40 for detail, except for the flatness of the obverse ribbon. You should be able to see parts of some diamonds, at least, for EF. So, I'll say VF-35 detail. The greenish, glossy surfaces suggest cleaning and/or Photoshop "improvement". There is a significant dent in the oak leaf to the left of O in ONE.

Overall, a problem coin that I expect the buyer will eventually regret having purchased.

Does anyone have any opinions about Great Southern Coins as a dealer? I see their offerings on ebay but the coins often have odd color or otherwise look unnatural. I've never purchased, so maybe my impression is unfair.

That is downright criminal to call that AU.

Unless AU= A long way from Mint

The pictures are clear so no one in the market for AU coins should fall for this but the auction even hinting at it being AU is a big red flag to stay away from this dealer.
