Joe, We must frequent the same coin shop. At my LCS, the available junk silver coins are just about exactly as you describe.

Mine actually mostly has Barber coinage (very worn) and Mercury dimes. They also have a bunch of foreign silver coins they sell at melt which are (mostly) in nicer condition. I need to look closer at some of those I think...

Thats probably pretty common. I usually grab any Barbers I see just because I like them. Other than that I try for year sets first of the other stuff.

Our LCS buckets are about the same as described.
With the addition of Four different Morgan/Peace buckets, and a foreign silver bucket.
For years I would pull the newer, full rim, silver coins. For the past few months I have been pulling the Barbers. I purchased all three Barber albums, I am only pulling different date Barbers, I have filled about half the holes in all three albums.
I do like pulling some of the foreign silver. Some of them are very beautiful coins. Canadian silver is my favorite, of the foreign silver. I really like how easy it is to figure out the actual silver weight (ASW)
The ASW for Canadian (by roll) Dollar $20.00 roll = 12oz ASW Half dollars $10.00 roll = 6oz ASW Quarters $10.00 roll = 6oz ASW Dimes $5.00 roll = 3oz ASW

Usually they have dimes, quarters and halves. I always pick the Kennedy 90%, Franklins and walkers in nice shape, because there is no premium over the normal like the online shops and others.

Our LCS has pretty much the same. Every once in a while I come across a very worn Seated dime or quarter which I'll rescue.

Nickels: Hundreds of War Nickels that have been sitting around for literally months on end. Dimes: There are almost always Roosevelt dimes present. Unlike other posters' experiences, Mercury dimes tend to ebb and flow in waves in my dealer's junk silver bin, and you can never be sure that there will be some in there. Typically they appear in batches, likely from liquidated collections. Over a 6-month span, I've only ever seen 3 or 4 Barber dimes in the junk silver bin, as well as a single 1891 Seated Liberty dime. Quarters: Almost entirely Washington quarters, although 1 or 2 Standing Liberty quarters appear on occasion (for some reason they are actually quite rare where I am). I have only ever seen 1 Barber quarter; however, it was so worn that it had almost reverted to a round disc of silver. Once my dealer had a heavily corroded 1853 Seated Liberty quarter in the bin; nothing that old has made an appearance since then. Half-Dollars: Naturally, 1964 Kennedy Half-Dollars are the most common. As with Mercury dimes, Franklin Half-Dollars appear in batches. I usually try to snag as many as I can when that happens, since they tend to go quite quickly. In the entire time I've been combing through the junk silver bin, I have only seen 8 Walking Liberty Half-Dollars (all of which I bought), spread out across a period of many months. There have never been any Barber Half-Dollars in it.

Always changing. I focus on getting full weight halves, and almost always find xf+ Franklins and Kennedys. This week, all walkers, from 1919 AG's to 1943 AU's. I haven't seen anything like it in 20 years. Must have been an estate hoard.
Some places I go to have foreign silver. The absolute best are the ones that buy foreign to melt and sell by weight. I've pulled a lot of pre 1919 sterling out of those. Others pull the foreign silver for flips and these dealers tend to overprice it, though some individual coins are bargains due to using old Krause catalog pricing.
